CAULIFLOWER CURRY RECIPE:
MY SUPER NOODLE-Y LUNCH RECIPE:
1 tsp olive oil
3 cloves garlic, diced
1/4 cup onion, diced (to taste)
1 medium zucchini, spiralized
1 cup spaghetti squash
1 cup cooked pasta/black bean spaghetti
1 cup red pasta sauce
salt & pepp to taste
Optional nutritional yeast on top! (can get in health foods store or on amazon http://www.amazon.com/Now-Foods-Nutri…)
In a pot over medium heat, saute garlic and onion in olive oil until tender.
Add sauce and season with salt & pep if desired, stirring until warm and lightly bubbly.
Add in noodles, spaghetii squash and pasta. Stir to coat.
Top with fresh parsley or chives.
Remember– you can really throw whatever you want into this dish! There are no rules!
